Final boss is a reference to video games, where the final boss is the biggest challenge that you have to overcome. But it's been co-opted into regular speak to mean the most extreme version of whatever you're talking about.

So the "I hate my girlfriend final boss" is the boyfriend who stereotypically does all the actions that prove he doesn't like his girlfriend. Constantly making fun of her, never spending time with her, manipulating, gaslighting, all those things.

It's used in a humorous sense to poke fun at archetypes or caricatures of people.

"Final boss" means to be the most dangerous version of something. Like a final boss in video games, if someone is the 'final boss,' they are the most extreme example of a concept. For example, an overly buff dude on steroids with a photoshopped jawline and biceps may be described as 'the alpha male final boss.'

The slang term “final boss” means that something, or someone, is the most difficult version. “Final boss” is a reference that comes from video games. In games with “boss” fights, the last boss in the game is often the hardest challenge players face. Bowser, in Mario games, is the perfect example. A player will even fight Bowser multiple times in many of the Mario games, but the final fight will always be the most difficult.

As the term has evolved, a student might say that a tough teacher’s final exam is going to be the “final boss” of tests, or a person going on a date with someone they’ve been crushing on for years might refer to the date night as the “final boss” of their dating life. Sometimes, people will jokingly use the term to refer to anything that is kind of intense or over the top. For instance, a person might look at a really big banana at the store and refer to it as the “final boss of fruit.”
