PDF download Download Article

Do you have a carton of half-and-half in your fridge that you know you won't be able to consume before it goes bad? No need to waste perfectly good money and cream! You can absolutely freeze half-and-half and defrost it at a later date. Read on for our full guide to whether you can freeze half-and-half, how to freeze it, how long to store it, and how to thaw it, with expert tips from culinary director and private chef Charles Webb.

Can you freeze half-and-half cream?

Culinary director and private chef Charles Webb says you can freeze half-and-half, but be aware that it may compromise its flavor and texture. To freeze it, pour it into a clean ice cube tray, then set the tray in the freezer. When the cubes are frozen, separate them into freezer bags and store for up to 3 months.

  1. Dairy products like half-and-half will stay perfectly good in the freezer, says Webb. But he adds that freezing half-and-half might somewhat "compromise [its] texture and flavor."[1] If that doesn't bother you, and if you can't use it within 7-10 days of opening the carton, feel free to freeze it!
    • Note: While you can technically freeze fat-free and low-fat half-and-half, it's not recommended because these products come out particularly watery and lumpy when they're thawed.

  1. This is the safest way to defrost half-and-half because you're still keeping it cold. If you leave it out on the counter, you might forget about it and let it come to room temperature, which would spoil it.[5]
  2. Once the half-and-half is thawed, the milk and fat will be separated. Pour it into a small bowl or cup and stir it vigorously with a fork or whisk to reincorporate it. It will still be a little separated and grainy even after stirring, but it's safe to pour it into your coffee or use it in a recipe.[6]

  2. 2
Can you freeze milk? Yes, you can freeze milk for up to 6 months.[8]
  3. 3
How do you know if frozen half-and-half is still good? Smell the half-and-half after it's thawed, suggests Webb. If it smells rotten, throw it out. If it doesn't have an odor, dip the edge of a spoon in it, then taste it. If it tastes sour or sulphurous, throw it out. Don't risk it, even if it smells fine![9]
  4. 4
Can you freeze half-and-half in the carton? It's not a good idea. Half-and-half expands when it freezes, and it might crack the cardboard that the carton is made of. The cardboard will also get soggy when you thaw it, making it more likely to flake or split apart.[10]
